Chickpea "Tuna" Salad

Ingredients

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 3 tbsp mayonnaise

Instructions

  1. Mash chickpeas with a fork on a plate or cutting board.
  2. Add chickpeas to a bowl with mayonnaise, pickles, and celery. Add salt and pepper if desired and mix it all together.
  3. Serve on lettuce wraps or whole grain bread, or just scoop some on top of a salad.
  4. You can play around with this basic recipe. Add chopped up bell peppers, mustard, sun-dried tomatoes, or whatever else you like to add some different flavors or extra crunch.
