Citrus Cabbage Slaw

Ingredients

  • 3 cups of shredded cabbage (green, red or mixed)
  • 2 scallions/green onions
  • 1 medium carrot
  • 2 tbsp light mayonaise
  • Juice of 1 lime (2 tbsp)
  • Juice of 1 lemon (3 tbsp)
  • 1/2 cup fresh cilantro, finely chopped
  • Salt and pepper

Instructions

  1. Chop cabbage, onion, carrot, and cilantro; combine in large bowl.
  2. In a small bowl, mix mayo, lemon, lime salt and pepper.
  3. Stir together and let rest for 30 minutes. Top on your favorite taco with pico de gallo salsa.
