Ingredients

  • 1/2 head each of red and green cabbage, chopped (or you can use 16 oz bags of coleslaw mix)
  • 1 small red onion
  • 2 carrots, shredded
  • 1 apple, diced
  • 1/4 cup lemon juice
  • 1 tbsp olive oil
  • 1 tsp salt and black pepper to taste
  • Optional: 1/4 cup chopped walnuts

Instructions

  1. Combine all ingredients together.
  2. Let stand for 20 minutes.
  3. Garnish with chopped walnuts.
