Healthier Jalapeno Poppers

Ingredients

  • 8 jalapeños, sliced lengthwise with seeds and ribs removed
  • 6 tbsp low-fat cream cheese
  • 6 tbsp low-fat cottage cheese
  • 1 clove garlic, minced
  • 6 tbsp Panko (or other) breadcrumbs
  • Pinch of salt

Instructions

  1. Arrange jalapeño halves cut side down on a foil-covered baking sheet. Make sure they aren’t touching!
  2. Broil on high for a 2-3 minutes until just beginning to roast.
  3. Mix cream cheese, cottage cheese, garlic, and salt together in a small bowl.
  4. Flip the jalapeños over and fill with the cheese mixture. Don't overfill, as the cheese will bubble while baking.
  5. Sprinkle breadcrumbs on top of each jalapeño half.
  6. Bake on the bottom rack under the broiler for just a few minutes, watching closely, until the breadcrumbs are golden brown and the cheese is bubbling.
