Kale Salad with Apples, Feta, and Nuts

Ingredients
- 1 large bunch kale leaves (or 6 oz. baby kale leaves)
- 4 oz. feta cheese, crumbled
- ½ cup nuts (sliced walnuts or other nuts)
- 2 red apples – diced, sprinkled with lemon juice
- LEMONY VINAIGRETTE
- 3 tbsp olive oil
- 1-2 tbsp lemon juice
- 1 tbsp Dijon mustard
- Optional: 1 tsp honey
- Optional: Salt and pepper
Instructions
- Tear kale into very small pieces off the stems – put in bowl and massage gently with some olive oil on your hands to soften the kale
- Mix in all ingredients
- To make the dressing, put all the ingredients in a jar and shake to mix! Add salt and pepper to taste.
- Add dressing and let sit for 10 minutes before serving.
