Ingredients
Sweet potatoes (2 lb = 6 servings)
1 tbsp olive oil
Topping Options: cinnamon and pecans, paprika, sour cream, thyme and rosemary
Instructions
Preheat oven to 400 degrees.
Wash and dry sweet potatoes. Rub with olive oil. Poke 4-5 times with a sharp knife.
Place sweet potatoes on a baking sheet.
Bake for 30-45 minutes, until a fork goes into the sweet potato easily.
Serve plain or with a topping.
