Ingredients
1 tbsp olive oil
1 tsp sesame oil
3 green onions, chopped
1 ½ tbsp soy sauce
¼ cup low sodium chicken broth
⅛ tsp ground ginger
2 large carrots
3 cups cauliflower florets
⅛ tsp black pepper
Instructions
Cut the cauliflower into small chunks and process in a food processor or grate the head of cauliflower with a grater.
Heat 1/2 Tbsp. olive oil in a nonstick pan over medium-high heat. Add carrots and scallions and sauté for 5 minutes
Add remaining olive oil and sesame oil to pan. Add cauliflower and remaining ingredients and lower heat to medium-low. Cook cauliflower mixture for 6-8 minutes, stirring frequently.
