Cauliflower Mashed Potatoes

Ingredients

  • 1 head of cauliflower or bag of frozen cauliflower

  • 2 tbsp heavy cream

  • 2 tbsp butter

  • Salt and pepper to taste

  • ¼ cup grated Parmesan cheese

Instructions

  1. Cut head of cauliflower into 4 large pieces and boil in water on the stove until it is soft (fork will poke through the cauliflower easily). Can steam or boil cauliflower that was in a frozen bag as well.

  2. Remove from heat and drain the water from the pot.

  3. Add the cream and butter. Mash with a potato masher, fork, or immersion blender/blender if available.

  4. Season with salt and pepper. Can top with gravy, chives, etc.
