Chard, Eggs and Cheese

Ingredients

  • 1 bunch Swiss chard

  • 4 spring/green onions

  • ⅛ cup of shredded cheese of your choice

  • 6 eggs

  • 1 tbsp olive oil

  • 1 tsp garlic powder or 1 tbsp minced garlic

  • ½ tsp salt, pepper to taste

Instructions

  1. Heat oil in a large skillet over medium-high heat. Slice green onions and stems of the Swiss chard into thin pieces. Cook in oil for 2 minutes.

  2. Stir in chard leaves and cook until wilted.

  3. Whisk eggs and add in seasonings and cheese. You can cook eggs separately, or pour them into the skillet with vegetables, and cook with a cover for 3-5 minutes until eggs are firm.
