Kale Salad with Apples, Feta, and Nuts

Ingredients

  • 1 large bunch kale leaves (or 6 oz. baby kale leaves)

  • 4 oz. feta cheese, crumbled

  • ½ cup nuts (sliced walnuts or other nuts)

  • 2 red apples – diced, sprinkled with lemon juice

Lemony Vinaigrette

  • 3 tbsp olive oil

  • 1-2 tbsp lemon juice

  • 1 tbsp Dijon mustard

  • Optional: 1 tsp honey

  • Optional: Salt and pepper

Instructions

  1. Tear kale into very small pieces off the stems – put in bowl and massage gently with some olive oil on your hands to soften the kale

  2. Mix in all ingredients 

  3. To make the dressing, put all the ingredients in a jar and shake to mix! Add salt and pepper to taste.

  4. Add dressing and let sit for 10 minutes before serving.
