Ingredients
1 large bunch kale leaves (or 6 oz. baby kale leaves)
4 oz. feta cheese, crumbled
½ cup nuts (sliced walnuts or other nuts)
2 red apples – diced, sprinkled with lemon juice
Lemony Vinaigrette
3 tbsp olive oil
1-2 tbsp lemon juice
1 tbsp Dijon mustard
Optional: 1 tsp honey
Optional: Salt and pepper
Instructions
Tear kale into very small pieces off the stems – put in bowl and massage gently with some olive oil on your hands to soften the kale
Mix in all ingredients
To make the dressing, put all the ingredients in a jar and shake to mix! Add salt and pepper to taste.
Add dressing and let sit for 10 minutes before serving.
