Roasted Root Vegetables

Ingredients

  • 5 root vegetables (choose a variety like rutabagas, turnips, parsnips, beets, sweet potatoes, etc.)

  • 2 carrots, chopped

  • 1 onion, chopped

  • 2 Tbsp extra-virgin olive oil

  • 3 tablespoons parmesan cheese

Instructions

  1. Preheat oven to 350 degrees F 

  2. Cut vegetables into large chucks and place into a medium-sized bowl and pour oil over top. 

  3. Add seasonings or parmesan and mix well. Spread an even layer on a baking sheet or pan 

  4. Bake for 1 hour or until tender. Serve.
