Tzatziki: Creamy Cucumber Lemon Dip

Ingredients

  • ½ cup grated cucumber

  • 1 cup whole milk Greek yogurt

  • 1 tbsp lemon juice

  • ½ tbsp olive oil

  • 1 garlic clove, finely minced

  • ¼ tsp salt

  • 1 tbsp chopped dill

  • Optional: 1 tbsp chopped mint

Instructions

  1. Grate cucumber using the largest round holes of your cheese grater.

  2. Use a towel to gently squeeze out the excess water from the cucumber – this will keep your dip from getting runny!

  3. In a mixing bowl, stir together all ingredients. Enjoy right away or leave in the fridge for a few hours for all the flavors to marinate together.
