Spinach, Berry and Parmesan Salad

Ingredients
- 4 cups fresh spinach
- 1 pint of strawberries or blueberries
- 1/4 cup parmesan cheese, grated or shaved
- 2 tbsp walnuts, chopped
- Optional: Red Wine Vinaigrette Dressing
- ½ cup olive oil
- ¼ cup red wine vinegar
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 1 tsp garlic powder
- ½ tsp salt, and pepper to taste
- 1 tbsp Italian seasoning
Instructions
- Put greens in a large bowl and top with berries, cheese and walnuts.
- Optional: To prepare the dressing, combine all ingredients in a jar (or other container with a lid) and shake well. Shake well before each use. Can be stored in refrigerator for up to 1 week.
- Just before serving, toss with 1/3 cup vinaigrette dressing. Enjoy!
