Spinach Feta Meatballs

Ingredients

  • 6-8 oz of spinach
  • 2 tbsp olive oil
  • 1 lb ground turkey or beef
  • ½ cup breadcrumbs, or ground almonds
  • ¼ tsp garlic powder
  • Freshly cracked pepper
  • ¼ tsp salt
  • 1 large egg
  • 2 oz feta cheese, crumbled

Instructions

  1. Roughly chop the spinach. Heat a large skillet over medium, then add 1 tbsp olive oil. Add chopped spinach with a pinch of salt. Sauté the spinach until it has fully wilted, then remove it from the heat.
  1. While the spinach is sautéing, stir together the breadcrumbs, garlic powder, and cracked pepper and a pinch of salt in large bowl.
  2. Lightly whisk the egg and add egg, ground meat, spinach, feta and bread crumb mixture until evenly combined.
  3. Shape the meat mixture into balls, about 1 tbsp each, should make approx. 24.
  4. Wipe out skillet and add 1 tbsp oil, heat over medium heat and swirl the oil, add half the meatballs, and cook till browned and then turn over. Cook thru about 6-8 minutes.  Repeat with second batch.
  5. Serve with your favorite sauce over sautéed greens, in a salad, or with some roasted squash.
