Sweet Southern Coleslaw

Ingredients
- 1 cup light mayonnaise
- ¼ cup apple cider vinegar
- 3 tbsp lemon juice
- 2 tbsp Dijon mustard
- ¼ cup granulated sweetener
- 2 tsp fennel seeds
- To taste black pepper
- 4 cups shredded cabbage
- 1 (6-oz) bag shredded carrots
- 1 cup diced red onion
- 2 yellow bell peppers, thinly sliced
- 2 red bell peppers, thinly sliced
- 5 radishes, thinly sliced
Instructions
- In a large serving bowl, combine the mayonnaise, vinegar, lemon juice, mustard, Splenda, and fennel seed; whisk until well combined. Add black pepper to taste.
- Add the cabbage, carrots, red onion, bell peppers, and radishes to the bowl with the dressing; toss gently to coat with dressing. Refrigerate for 1 hour before serving for best flavor.
