Arugula Lemon Salad

Ingredients

  • 2 bunches arugula, washed, dried and torn into bite-size pieces

  • 1/4 cup olive oil

  • 1/4 cup parmesan cheese, grated or shaved

  • 1 and 1/2 tbsp lemon juice (half of a lemon)

  • Salt and pepper, to taste

Instructions

  1. Put greens in a large bowl and drizzle with olive oil and lemon juice. Sprinkle with salt and pepper.

  2. Toss until well-mixed.

  3. Top with parmesan cheese (you can use a vegetable peeler to grate if you have a whole chunk of cheese).
