Ingredients
2 bunches arugula, washed, dried and torn into bite-size pieces
1/4 cup olive oil
1/4 cup parmesan cheese, grated or shaved
1 and 1/2 tbsp lemon juice (half of a lemon)
Salt and pepper, to taste
Instructions
Put greens in a large bowl and drizzle with olive oil and lemon juice. Sprinkle with salt and pepper.
Toss until well-mixed.
Top with parmesan cheese (you can use a vegetable peeler to grate if you have a whole chunk of cheese).
