Blueberry Pecan Salad With Chicken

Ingredients

  • 3-4 cups salad greens or baby spinach

  • 1/4 cup blueberries

  • 1/4 cup pecan halves (optional: toasted is extra delicious!)

  • 1/4 cup shredded rotisserie chicken, warmed

  • 3 tbsp Crispy Beets (crunchy salad topping available at most grocery stores)

  • Optional: 2-3 tsp fresh mint, chopped

  • Optional: 2 tbsp crumbled feta cheese

Instructions

  1. Put greens in a large bowl and mix in chopped mint, if desired.

  2. Toast pecan halves in a toaster oven or standard oven (300F for 4-5 minutes). You can also heat them on the stovetop in a skillet with a tiny bit of oil, 4-5 minutes or until browned. While you wait, shred and warm up rotisserie chicken in the microwave or oven.

  3. Top salad greens with blueberries, feta cheese (if desired), pecan halves, rotisserie chicken and Crispy Beets. Drizzle with salad dressing of your choice. Yummy options include: oil and vinegar, Italian dressing, Green
