Bell Pepper Stuffed with Tuna Salad

Ingredients

  • One 5 oz can tuna fish (packed in water)

  • 1 to 2 teaspoons plain Greek yogurt

  • ½ cup chopped veggies: onion, celery, pepper, carrots

  • 2 bell peppers, sliced into quarters (1 or 2 inch-wide slices) with ribs/stems removed

Instructions

  1. Drain and rinse tuna. Mix tuna and plain Greek yogurt in a bowl. 

  2. Add your favorite chopped veggies for crunch.

  3. Add you favorite flavorings.

  4. Fill bell pepper quarters with tuna salad. Enjoy!

Flavoring Options:

  • Salt and freshly ground black pepper

  • Lemon pepper

  • Curry powder

  • Chopped sundried tomatoes

  • Chopped pickles (or relish)

  • Chopped hardboiled egg
