Ingredients
1 bunch kale
2 sweet potatoes cut into medium cubes
2 tbsp olive oil
2 cloves minced garlic
Optional: 1 small package button mushrooms, wiped clean and in large dice
Optional: 4-5 green onions (spring onions/scallions), sliced into thin rings
Instructions
In a large skillet, cook garlic in 2 tbsp of oil over moderately low heat until garlic softens / browns.
Add sweet potato, and optional scallions/mushrooms. Cook until sweet potato is soft, approx. 6-8 minutes.
Add salt and pepper to taste, then add kale and cook until bright green and soft.
Optional: Sprinkle with Parmesan. You can also season with oregano or basil for an Italian flavor, or cumin and paprika.
Optional: Serve with fried egg
