Chrissy's Kale and Sweet Potato Hash

Ingredients

  • 1 bunch kale

  • 2 sweet potatoes cut into medium cubes

  • 2 tbsp olive oil

  • 2 cloves minced garlic

  • Optional: 1 small package button mushrooms, wiped clean and in large dice

  • Optional: 4-5 green onions (spring onions/scallions), sliced into thin rings

Instructions

  1. In a large skillet, cook garlic in 2 tbsp of oil over moderately low heat until garlic softens / browns.

  2. Add sweet potato, and optional scallions/mushrooms. Cook until sweet potato is soft, approx. 6-8 minutes.

  3. Add salt and pepper to taste, then add kale and cook until bright green and soft.

  4. Optional: Sprinkle with Parmesan. You can also season with oregano or basil for an Italian flavor, or cumin and paprika.

  5. Optional: Serve with fried egg
