Ingredients
3 cups of shredded cabbage (green, red or mixed)
2 scallions/green onions
1 medium carrot
2 tbsp light mayonaise
Juice of 1 lime (2 tbsp)
Juice of 1 lemon (3 tbsp)
½ cup fresh cilantro, finely chopped
Salt and pepper
Instructions
Chop cabbage, onion, carrot, and cilantro; combine in large bowl.
In a small bowl, mix mayo, lemon, lime salt and pepper.
Stir together and let rest for 30 minutes. Top on your favorite taco with pico de gallo salsa.
