Ingredients
2 cups sliced cucumbers, sliced into thin half moons
2 cups sliced radishes, sliced into thin half moons
¼ cup olive oil
¼ cup apple cider vinegar
2 tbsp finely sliced green onions
1 tsp salt
Optional: ¼ tsp sweetener (honey, white sugar or sugar substitute)
Optional: 2 tbsp fresh dill (or 2 tsp dried)
Instructions
Wash, slice and combine cucumbers and radishes; set aside.
In a separate bowl, combine the rest of the ingredients to make the dressing.
For the best flavor, keep the veggies separate from the dressing and combine everything right before serving.
Top with green onion, serve and enjoy!
