Radish and Ricotta Salad

Ingredients

  • 1 cup sliced radishes

  • 1 cup loosely packed chopped radish greens

  • ⅔ cup chopped ricotta cheese

  • ⅓ cup peeled and chopped clementine

  • 2 tablespoons chopped pistachios

  • 1 cup loosely packed fresh mint leaves

  • 1 tablespoon extra-virgin olive oil

  • ⅛ teaspoon salt

  • ½ teaspoon freshly ground black pepper

Instructions

  1. In a large mixing bowl, stir together all ingredients until combined 

  2. Portion into 2 servings and serve.
