Ingredients
1 cup sliced radishes
1 cup loosely packed chopped radish greens
⅔ cup chopped ricotta cheese
⅓ cup peeled and chopped clementine
2 tablespoons chopped pistachios
1 cup loosely packed fresh mint leaves
1 tablespoon extra-virgin olive oil
⅛ teaspoon salt
½ teaspoon freshly ground black pepper
Instructions
In a large mixing bowl, stir together all ingredients until combined
Portion into 2 servings and serve.
