Ingredients
4 cups fresh spinach
1 pint of strawberries or blueberries
¼ cup parmesan cheese, grated or shaved
2 tbsp walnuts, chopped
Optional: Red Wine Vinaigrette Dressing
½ cup olive oil
¼ cup red wine vinegar
1 tbsp Dijon mustard
1 tbsp honey
1 tsp garlic powder
½ tsp salt, and pepper to taste
1 tbsp Italian seasoning
Instructions
Put greens in a large bowl and top with berries, cheese and walnuts.
Optional: To prepare the dressing, combine all ingredients in a jar (or other container with a lid) and shake well. Shake well before each use. Can be stored in refrigerator for up to 1 week.
Just before serving, toss with 1/3 cup vinaigrette dressing. Enjoy!
