Spinach, Berry and Parmesan Salad

Ingredients

  • 4 cups fresh spinach

  • 1 pint of strawberries or blueberries

  • ¼ cup parmesan cheese, grated or shaved

  • 2 tbsp walnuts, chopped

  • Optional: Red Wine Vinaigrette Dressing

  • ½ cup olive oil

  • ¼ cup red wine vinegar

  • 1 tbsp Dijon mustard

  • 1 tbsp honey

  • 1 tsp garlic powder

  • ½ tsp salt, and pepper to taste

  • 1 tbsp Italian seasoning

Instructions

  1. Put greens in a large bowl and top with berries, cheese and walnuts.

  2. Optional: To prepare the dressing, combine all ingredients in a jar (or other container with a lid) and shake well. Shake well before each use. Can be stored in refrigerator for up to 1 week.

  3. Just before serving, toss with 1/3 cup vinaigrette dressing. Enjoy!
