Ingredients
½ tbsp vegetable oil
½ tsp sesame oil
½ tbsp fresh ginger, minced
1 garlic clove, finely minced
¼ tsp sugar
¾ lb. young pea shoots
⅛ tsp soy sauce
1 tbsp oyster sauce
Instructions
Rinse the pea shoots thoroughly in cold water, twice, lightly drained. In a large wok or skillet over high heat, heat oils
Add ginger, garlic and sugar. Toss and add shoots, soy and oyster sauce. Stir-fry for two to three minutes, or until the leaves soften and are tender.
Place shoots on serving dish. Reduce the remaining liquid by ½. Pour over shoots and serve immediately.
