Tuscan Style Sausage and Kale Soup

Ingredients

  • 1 Tbsp olive oil

  • 1 large onion, chopped

  • 2 cloves garlic, crushed

  • 1 pinch red pepper flakes

  • 1 pinch black pepper

  • 1 lb bulk hot Italian sausage, removed from casings and crumbled

  • 1 Tbsp chopped fresh basil

  • ¼ tsp paprika

  • 6 cups low sodium chicken broth

  • 4 cups chopped kale

  • 1 (15 ounce) can cannellini beans, drained and rinsed

  • 1 cup peeled and chopped sweet potatoes

Instructions

  1. Heat oil in a large stockpot over medium heat until the oil shimmers; cook and stir onion, red pepper flakes, and black pepper until onion is translucent, about 10 minutes 

  2. Stir in sausage, basil, paprika and garlic. Cook until sausage is browned and fully cooked, 5-10 minutes 

  3. Add broth, kale, beans, and sweet potatoes to pot; lower heat to medium-low. Cover and simmer until sweet potatoes are tender, 15-20 minutes.
