Zuppa Toscana

Ingredients

  • 1 tbsp butter

  • 1 cup diced onion

  • 1 cup diced celery

  • 1 lb ground Italian sausage

  • 1 tsp Italian seasoning

  • 6 cups broth, chicken or vegetable

  • 3 ½ cups cauliflower florets

  • 8-10 oz kale in small pieces

  • 1 cup heavy cream

  • Salt, pepper, red pepper flakes to taste

Instructions

  1. In a large soup pot melt butter and sauté onion and celery

  2. Add sausage and cook 5-7 minutes until browned.

  3. Add Italian seasoning and broth, bring to a boil, add cauliflower and cook until fork tender, about 10 minutes.

  4. Add cream and kale until just bright green and cooked.

  5. Season with salt, pepper and red pepper flakes if desired.
