Ingredients
3 medium to large beets, trimmed
1 orange with zest
1 lemon or lime with zest
2 tbsp olive oil
Salt to taste
Optional: ½ cup chives
Instructions
1. Wrap beets in aluminum foil and roast at 400F for 60 min. Once cooled, the skins will easily peel off.
2. Cut beets in thin slices.
3. Add lime or lemon zest and juice from entire orange.
4. Add olive oil and toss to combine. Add salt to taste and toss to combine.
5. Optional: Add chives just before serving.
Note: The beet greens are also edible and delicious in soups or sautéed with a bit of garlic and citrus.
