Ingredients
½ head each of red and green cabbage, chopped (or you can use 16 oz bags of coleslaw mix)
1 small red onion
2 carrots, shredded
1 apple, diced
¼ cup lemon juice
1 tbsp olive oil
1 tsp salt and black pepper to taste
Optional: ¼ cup chopped walnuts
Instructions
Combine all ingredients together.
Let stand for 20 minutes.
Garnish with chopped walnuts.
